Italy is the second largest producer of olives and olive oil, but historically Italy is considered as the home of the best olive oil. Probably already in prehistoric times the olive tree was widespread in the Mediterranean, in the early days of ancient Rome the production of olive oil was brought from Greece to Italy. After centuries of selection there are nearly a hundred varieties of olive trees in Italy, while some olive tree species are restricted to single villages. The different types of oil are as different as wines depending on the variety of the olive tree, climate, soil characteristics and processing.
The European Quality Label DOC, which guarantees the origin of a particular area, was awarded to several Italian olive oils. Extra virgin olive oil "Denominazione di Origine Controllata" (DOC) is prepared according to established production rules and subject to strict quality controls.
